There is a pretty good variety of mosses out there that many have tried. To name a few (all common names):
    1. Java Moss
    2. Taiwan Moss
    3. Singapore Moss
    4. Stringy Moss
    5. Erect Moss
    6. Flame Moss
    7. Zipper Moss
    8. Willow Moss
    9. Mini pellia (riccardia sp.)

There are a number of other species out there that I can't think of off the top of my head, but it really depends on what kind of look you are looking for. The shrimp are not picky about what types of moss you use. They will find eat the micro-algaes that grow on any of these mosses (and other plants you grow in your tank(s)).

I have flame, weeping, java, taiwan. I found that they don't really prefer any one over another.
