Well, I just got 10 Red cherry shrimp. They all are doing great!. But I've noticed that on 1 or 2 of them, Inside their bodies are green. Like where you can see through. Its green. Im not sure if its b/c they have been cleaning and eating stuff from my plants so their insides would look green... Does anyone know what im talking about and is this normal?

I thought they display a saddle when they are carrying eggs before the eggs reach the legs?

That yellow spot on her back is called a "saddle" it means she's ready to breed. And once she is fertalized she will move the eggs from her overies(near her head) to her legs, where the eggs are fertilized by the sperm. When the eggs are in her swimming legs, it means she is pregnant.
